So after canning 9 quarts of peaches, we started in on salsa. The above photos shows the first salsas made on the right plus a small percentage of the tomatoes being prepared for the next much larger batch. Below is that batch being cooked. You will have to believe me that the pan is quite large. It was originally purchased to scald whole chickens.
Wow, you guys sure are industrious. I really ought to learn how to can fruits and veg. Garden was kind of a bust this year, though.
Thanks Denise! Maybe a little too industrious- my muscles are telling me. Our garden is hit and miss this year. We are still hoping for more tomatoes, beans and corn.
