I am done canning for the year, but we are still actively fermenting our harvest to preserve it. Tom has 10 5-gallon carboys of apple cider bubbling away in the dining room. And I have 4 smaller carboys of wine as well (blackberry, red plum, black plum and elderberry).
Today I started a batch of pear wine.
And I started my third crock of the year of fermented pickles.
Wow it all looks super yummy!

The carboys are all such beautiful colors. So how long do they have to sit and ferment?
Thanks Denise! The apple cider ferments about one month, the wines about 3 months in the carboys.
