Happy Mexico Independence Day

To celebrate for dinner I made Chiles en Nogada. I am thinking it is not very authentic since dried cranberries are used, but it was still really good. It is supposed to represent the colors of the Mexican flag . I used our chicken and stock. I think I might make it each year.

I accompanied it with my favorite margarita recipe.

That’s quite an interesting recipe! Sadly, it’s another one that our family can’t use… 🙁

I am striking out with your family, aren’t I? Well, we liked it anyway.

It’s not your fault!! When you have one person on low cholesterol, etc. (for cardiac care) another gluten free, who also has to be careful about eating too many fresh foods, and a third on a semi paleo, gluten free, very restricted diet to control psoriasis….. Um, you probably get a better idea of the problems we have.

I’m glad you liked it!! 🙂
