North African Fish Stew

I wasn’t planning on posting today, but my dinner was so good I thought I would share it.  It was North African fish stew from our Skagit Valley Herald.  And it was easy and quick to make.  Just had to buy some cod and canned chickpeas.  I used marinara sauce instead of the tomato puree, and I cheated and used already minced garlic we had in the fridge. Here it is cooking.

And here was my dinner.

Tom didn’t want to try it so had leftover chili instead.  But I loved it.  This recipe is definitely a keeper, for me anyway.

    I love cod, but can’t eat chickpeas, so I’m stuck without getting to try your yummy sounding recipe. Phooey! I’d have had a difficult time with chili, too. Oh, well. I’ll survive! Thanks for posting all the recipes. It’s fun to read them and see if we could use them on our difficult diets.
