Poached Ham with a Sharp Cherry Sauce

This was our great dinner tonight. I have never poached a ham before but it was yummy. Moist and still a little salty and smokey. I used my InstantPot too. Tom unexpectedly almost finished off the fresh cherries today so I used our canned cherries. The sauce initially smelled like gin with the juniper berries but did not taste like it. I used 2 tablespoons of honey instead of the sugar.

The recipe is from Ripe by Nigel Slater. I am looking forward to more of his recipes as the harvest season progresses.

    Looks and sounds good! Do you know what Morello cherries are? Neither my husband nor I have ever heard of them.
