Crock Pot Rotisserie Chicken and Cowboy Butter

For dinner I made this crock pot chicken. It is easy to make, but you did need some time. The chicken is tender and flavorful. I used 1 rather than 3 tablespoons of salt. When you eat some of the spice it is pretty hot. I might not put the spice under the skin next time. But we both thought it was tasty and should be made again.

I also made Cowboy Butter. I had wanted to make this for a while but finally had the gumption. Plus I happened to have all the ingredients. We put it on our mashed potatoes and peas. It was good. The raw shallots are a little weird but it is flavorful. Even Tom liked it. This should last a while.
