I made this for dinner last night with the leftover Easter ham. It was quick, easy and tasty. Here it is in my Instant Pot about to cook with all of the colorful beans.
Here it is after pressure cooking for 25 minutes and the tomatoes and ham were added.
The recipe says to simmer this for 20 minutes but for me the larger beans were not quite done so I did an additional 20 and they were perfect. One comment was that it wasn’t very flavorful so I added 2 teaspoons of liquid smoke and 2 tablespoons of rub mixture. Here it is after Tom had eaten half of it.
It was so good and a perfect use for leftover ham.
