Ham Bean Soup

I made this for dinner last night with the leftover Easter ham. It was quick, easy and tasty. Here it is in my Instant Pot about to cook with all of the colorful beans.

Here it is after pressure cooking for 25 minutes and the tomatoes and ham were added.

The recipe says to simmer this for 20 minutes but for me the larger beans were not quite done so I did an additional 20 and they were perfect. One comment was that it wasn’t very flavorful so I added 2 teaspoons of liquid smoke and 2 tablespoons of rub mixture. Here it is after Tom had eaten half of it.

It was so good and a perfect use for leftover ham.

    Okay, i got four Hand Bean Soup emails today! The first two and the last one seem to be identical. The third one was blank. Shall i just jump up and down with glee??? Maybe this is a first?I
