Homemade Italian Sausage

So today we made sausage for the first time.  I found this recipe, and we followed it.  I got the spices (salt, sugar, toasted fennel seeds, fresh ground black pepper, & fresh grated nutmeg) ready.  I initially read the recipe wrong and chopped one clove of garlic and added it.  

Thankfully, I reread the recipe, and it called for 1 head garlic.  I googled to make sure, but that is a full bulb.  So then I peeled and chopped a whole bulb of garlic and added it to the spices.  

The recipe called for one cup of chopped fresh parsley.  Here is our parsley chopped.  It was a little less than 1 cup so I had to add some dried parsley as well.  

We used our pork steaks.  We ended up using 6 of them.  Here is Tom cutting the cold steaks into cubes, separating the meat and the fat.  

We then added the spices and parsley to the chopped meat and fat.  Tom mixed it with his clean hands.

Then we got everything ready for grinding.  We thankfully have a grinder attachment for our KitchenAid. 

Here is the sausage coming from the grinder.  

Here is the sausage all ground up.  It was at this point that we added the dry sherry and the sherry vinegar.  

We ended up with 5 1/2 pounds of sausage.  We packaged 4 3/4# for freezing.

Then it was time to take a break. Tom played with Steve.  

And then it was time to cook some sausage for dinner.  Here the patties are in the pan frying.  

We had breakfast for dinner with the sausage, scrambled eggs and fried potatoes.

The sausage was amazing, way better then the sausage we get from our butcher.  It had amazing flavors of the garlic and fennel.  We will definitely be making this again!

    That sounds really good! I have one of those grinder attachments for my Kitchen Aid, too. They’re great! I love the puree attachment, too!
