Meatball Minestrone Soup

I purchased this Kindle book for $1.99 three days ago.

We already had the Bacon Cheddar Stuffed Meatloaf, but it wasn’t that great. It might be because I made some substitutions in the recipe.

But this evening I decided to try the Meatball Minestrone Soup. We have plenty of hamburger from Sydney so I am trying to get creative with it. Here it is after cooking and serving two bowls.

Here is a copy of this recipe. As we do not have summer squash yet, I substituted extra carrots and green beans. It was really good and the meatballs held up well. I will be keeping this recipe.
