Pecan “Fried” Fish with Tartar Sauce

I learned today that I cannot walk outside still with my ankle due to uneven ground.  So I decided to be as productive as I can while Tom is having to do the outside chores with the torn meniscus in his knee.  So I did laundry and organized the year’s worth of paperwork in anticipation of doing taxes.  But I also decided to cook.  I decided to used a recipe from our Sheet Pan Suppers cookbook and make this fish dish.  This cookbook has been surprisingly good.  Tom purchased it on a whim when we went shopping well before the pandemic at Greenhouse in Bellingham (we bought other cool kitchens things at that visit too).  

This recipe involves dipping fish in a flour/salt mixture, then a mayonnaise, egg, paprika and pepper mixture and then a toasted pecan meal, panko, and parsley mixture.  It is then baked in the oven.  Here it is all done.  (The disrupted crust corner was from checking for doneness.)

The tartar sauce was mayonnaise, parsley, capers, sweet relish, lemon juice, pepper and Worcestershire.  I accidentally put in too much lemon juice so it is a little runny.

I made baked fries and our corn on the cob to accompany it.

This was incredibly good. It lifted my mood and was reasonably healthy too. Tom really enjoyed it so a win. We will be keeping this recipe.

Hopefully tomorrow I will be able to walk outside and help out more. Go Hawks!!!

    Aww! I’m very glad you enjoyed your fish dinner! It does look good even though I’m not a fish lover!! I do like some fish , but it must be a light flavored one. I hope your ankle will be all better soon. Is Tom scheduled for surgery on his knee?

      Thanks Jeanne! We had halibut so it was really good. I do hope my ankle keeps improving quickly. Tom is not scheduled for suites. He had his MRI Wednesday and a follow up appointment with the orthopedist next Wednesday. Hopefully surgery will be scheduled soon.
