I got my booster shot today at La Conner Drug (a great place to get shots BTW). As an immunocompromised person, I was able to get my third dose of the Pfizer coronavirus vaccine in later August. They recently opened it up to be able to get your booster at 5 months so I did that today. It is a huge relief to possibly have some extra protection against Omicron. I say possibly since with my prednisone and infliximab medications, I do not know if I can mount an effective immune response with these vaccines. So I need to continue to try to be extra cautious because I am quite high risk if I get this virus.
So after the shot I decided to do some cooking. I started with Keto Cheese Crackers with Pepper Jack. They are good but not as crisp as I would like. Next time I will roll them even thinner and cook a little longer.
Then I made Easy Keto Buns. I have made these before and like them. I added some fresh rosemary this time.
I had wanted to make Mary Berry’s Roasted Sausage and Potato Supper for dinner. I started thawing some Italian sausages for it earlier but went shopping after my shot and found these at Haggen’s. Bangers from Uli’s!?! Perfect!
This recipe is easy. Here it is ready to go in the oven.
And here it is all cooked top. Really good. Comfort food for sure!
Next was Keto Lemon Pound Cake. Here it is cooling out of the oven.
I then iced it. Unfortunately I was crumbly and not that flavorful. So I will not be making it again. Three out of four is not bad!
Cooking is a good way to get our mind off all this isn’t it? It’s stretched on so long. One of my girlfriends has gone through chemo during all this and is also on drugs for her MS that suppress her immune system. She says she can’t be careful enough, and she tries to dive into as many of her normal activities as possible to keep her mind active.
Cooking is great during a pandemic. Procuring food can be a little tricky though, but this has been a wonderful distraction for me.
Yes, hunter-gathering is challenging, but pretty much my only outside activity these days beyond walking the dogs!
