Cheese Making

So today I am making Iberico and Ricotta cheeses.  The Iberico cheese is in the cheese press to the right, and the Ricotta (made from the whey from the other cheese) is dripping on the left.  Both cheeses are from milk from our doe Patches.

Plus today we are going to finish the pruning.  It is a huge task but urgent since many of the trees have buds.  The dogs are helping.

    Never heard of Iberico before- thanks for the link. I love the bit of history on Spanish cheese and the idea of there being “cheese outlaws”.
