Homemade Pastrami

So I used my homemade corned beef to make pastrami.  It had been boiled with vegetables for 3 hours.  I took one pound out.  I mean how much corned beef can you eat?  I sort of used this homemade pastrami recipe.  I made the spice rub dividing the amounts by 1/4 and rubbed it into my hunk of beef.  I let it sit covered at room temperature for 2 hours.  Then I cooked it in the oven on a rack with water and covered with foil at 300 degrees for 1 hour.  I let it cool some and then sliced it against the grain.  I wrapped it in foil and after further cooling moved it into the fridge.  Here is my lunch with it from today.  I melted some swiss cheese on top and sliced some of my home fermented pickles with it.

  2. That does look good! Your question though about “how much corned beef can you eat?” That sounds like a challenge. Lol

    I guess I’m weird. I’ve never eaten corned beef! I’d like to try it sometime. Your lunch does look yummy!
