Pot Roast with Carrots and Mashed Potatoes

I wanted Pot Roast for dinner so Tom grabbed one of our chuck roasts to thaw. I did not have a lot of time so found this pressure cooker pot roast recipe: https://www.thekitchenwhisperer.net/2016/05/14/pressure-cooker-moms-classic-pot-roast-with-savory-onion-gravy/ I also used the mashed potato recipe. I used our beef broth but unfortunately had to use store bought carrots and potatoes as we have run out of farm ones. It went as written except I had to double the corn starch to get some thickness in the gravy. Here is the result:

It was SO good. Definitely a recipe to keep.

    I love pot roast. Just had it last night when we were with our relatives!

      Thanks Jeanne. This one was a little different with the onion gravy and the potatoes cooked outside of the roast. I really enjoyed it!
