Chicken For Dinner

Last week I purchased some organic frozen chicken breasts that were on sale, partially because we do not have any chicken meat of our own.

So last night I decided to use three of them to make this recipe.

Sorry for the poor quality of the photo. I took it at my mom’s family cabin on my iPhone from Sunset’s 25 All-Time Favorite Test Kitchen Recipes.

I did use our carrots, fresh tarragon and fresh parsley. I decided to add branches of fresh rosemary, sage and thyme while it was simmering. Here it is all cooked up.

It was very good and French in its flavorings. It was perfect for an autumn dinner. We watched a violent and ultimately abhorrent Thursday Night Football game with it.

By the way, for Monday Night Football (an amazing game!!!) I used 4 of the breasts to make Skillet Chicken in Creamy Sun Dried Tomato Sauce. I forgot to take a photo, but it was also amazing.

    I just had to go and check what we missed on Thursday night, as we tuned out of the game at halftime. Man, that was ugly. Monday game was pretty awesome, though 🙂 I’ve not cooked with sundried tomatoes before, but that skillet dish looks so yummy. Thanks for the link!
