This evening we made my grandmother’s Swedish Meat Balls recipe that I recently received from my mother. This was after I slept all afternoon after a work shift. I had to move Wally off my side of the bed first though.
Here is the recipe, handwritten by my grandmother.
Today is the tenth anniversary of her death so I thought it would be a nice tribute to her. We tried to follow it accurately. Although we didn’t have ground veal so used 1# of hamburger and 1/4# of our pork sausage. I did grind them twice though.
We mixed the meats, half and half, fried onions, wetted bread crumbs, salt, pepper and ginger.
We tried to make 1 inch balls, and Tom lightly browned them in butter. ,
We made a gravy with some flour, more half and half, instant coffee and beef Better Than Bouillon. Then simmered the meatballs in the gravy for 10 minutes. We did have to add more half and half.
We were able to purchase some lingonberries from our local grocery store.
Tom made mashed potatoes and then we prepared our dinners.
Unfortunately the meatballs were not very sturdy and almost became a hamburger gravy. It was tasty. Next time I might put less half and half in the meatballs themselves. It was fun to read her handwriting and make this recipe. I do miss her. Here are a couple of photos of her with me, one with my mother and the other with my brother.
In other news, my stepdad Al is under going surgery this evening for an injury he sustained in a fall. Prayer, wishes and healing thoughts would be appreciated. Here is a photo he took of me and my brother when we were kids.














those meatballs look like good comfort food! it is interesting how much half and half the recipe calls for-maybe an egg would help bind them a bit more?
