Could you give me a recipe for the zucchini burritoes?!?
I agree you should post the recipe for the zucchini burritos. How nice to know where your food comes from!
Zucchini Burrito Filling:
2 tablespoon oil
1 onion, chopped
2 carrots, sliced
1 clove garlic, chopped
2 1/2 teasp chili powder
1 teasp salt
3/4 teasp each cumin and oregano
4 zucchinis, sliced
1 green pepper, sliced
1 cup corn
2 cups beans
Saute onion, carrots, garlic, chili, salt, cumin, oregano for 10 minutes. Add remaining ingredients and continue to saute for 7-8 more minutes. Serve in burrito shells with cheese and sour cream.
This recipe is from my mother. I cannot remember where she got it from.

It is really good and easy. And uses up 4 zucchinis! Hopefully it is clear, when I say beans I mean cooked pinto or black beans.
YUM! I’m coming to your house for dinner! You should open up a home grown food restaurant. If the economy tanks even worse, you guys will still be well fed!

Thanks Jackie! You are always welcome to dinner. My grandmother always said that living on a farm helped them through the Great Depression. She never went hungry. My question is how to afford the grain, hay and fuel if things really go down the toilet.
