Sold Quad and Swedish Dinner

So I had planned this dinner for a while.  It is Poached Salmon with Dill Sauce (Gerd’s Inkokta Lax) and Potato cakes with roe (Rårakor med löjrom).  I started with grating red potatoes and frying them in butter and oil.

While I was doing this I boiled some water with vinegar, salt, peppercorns, a carrot, an onion, dill and a bay leaf.  This liquid was then poured over salmon and a piece of halibut (for Tom).  Here it is in the oven.

Here are the potatoes all fried up into cakes.

While the fish was cooking I got the dill sauce ready.  It is whipped cream, mayonnaise, mustard, pepper, salt and dill.

Then I got the other accompaniments ready- dill, lemon, red onion, roe, pickled vegetables and creme fraiche.

Here is the fish all ready.

Tom was busy selling our Honda Quad while I was cooking dinner.  So I had to keep the fish and potato cakes warm while he finished the deal.  I put the fish and cakes on plates and kept them in the oven.

Here is the quad all loaded up, ready to leave us.  This is sad because Tom has had this machine since 1998, and it has been a really good one.  We have done a lot of things with it. But Tom has a nicer quad now, and it is being neglected.  So it is going to a good home, but it still is hard to have a good machine go.

But then we got to enjoy a lovely meal.  Tom avoided the roe, but I actually liked it.  We both agreed that this was an amazing meal.

    The first thing I said was ‘What’s William gonna ride?’ of course, I found out! Is the new quad bigger?
    Are you going to Black Sheep? My daughter is going, but I can’t this year. Ratzenphooies!

      Well, I thought we should keep the old quad for William when he is big enough. The new quad is way too big for him for a while. We are not going to Black Sheep this year. Too much going on in July for that this year. Hoping for next year.

      I received one within the last week I think. Definitely less than usual. I hope she is OK. She did respond to my post about Walker though.
