So I found over 1 pound of cod languishing in our freezer. And then I happened upon a Fish Taco recipe I was saving. Then I happened upon a Pineapple Margarita recipe I was saving. And Taco Tuesday came to life.
The first step was making the margarita, of course. Here is the recipe I used. And here is the drink.
I sipped on this while I prepared the rest of the meal. Next came the Cabbage and Cilantro Slaw.
Then came the Chipotle Tartar Sauce.
Then came the Baja Fried-Fish Tacos. I probably took a photo of this recipe from a Sunset cookbook at my mother’s cabin with my phone.

And here are my fish tacos all assembled with a refreshed pineapple margarita.
Tom didn’t have the slaw on his, but surprisingly he had the tartar sauce but added salsa as well. These taco were amazing. It brought found memories for Tom of eating fresh fish tacos with fresh salsa in Baja on his motorcycle trip there. So this was a very successful Taco Tuesday.
If i enjoyed fish a bit more, I’d probably try this! We don’t eat a lot of fish. Mind you, I do love cod, halibut and albacore tuna. We don’t eat tacos often, either. I’m glad Tom enjoyed this.
I am glad he did too. I loved them. The next two days I had the fish on the slaw with some of the tartar sauce, no tortillas. That was really good too.
