Best Reuben and Skagit Views

I am always in pursuit of the best Reuben sandwich.  I didn’t think I had found it.  The last attempt was good, but the innards were not warm.  So I tried yet again with this recipe, and here is the result!

I think I finally got it!!!  Unfortunately I couldn’t find marbled rye so I used a sour dark rye from Trader Joe’s in Everett.  (It looks burnt, but the bread is just so dark.)  And we couldn’t find corned beef anywhere this time of year (I guess you have to make it yourself or get it in March) but I substituted pastrami.  And it was truly excellent even with the substitutions.  This is my recipe forever more!

I took a detour on the way home from work this morning to look at the tulips.  Most years I do not bother because the traffic is so awful.  But for mental health reasons, this year I feel it was important.  But I think a lot of other people are thinking the same thing.  I only drove by one field of tulips on Best Road, but they are pretty.

I then drove north on Farm to Market Road to go to our post office to pick up mail.  The view from the top of the hill was excellent of the Salish Sea and San Juan Islands.  By the time I got my phone out though I was at the bottom of the the hill so less dramatic but still beautiful.  

I live in an incredibly gorgeous part of the world, and I need to appreciate it more often.

Now here are the obligatory Ryeleigh images.  I usually show her being cute, but I thought it might be nice to share when she is less cute.  When she gets tired (and is not getting her way) she gets what we call “vipery”.  Here is an example of what we get to deal with in these moments.

But here she is, shortly thereafter, when she finally settles down to sleep.  

Puppies are exhausting, but I cannot tell you how much she has enriched our lives, particularly in an otherwise lonely pandemic.

    Hm! I never would have thought of using a term like vipery! We just tell Rico he’s too wild!! He’s just so much fun!!

    I have always loved Reuben sandwiches, too. Lo and behold! There’s a neat little restaurant in Newport, OR, where I can get a delicious gluten free Reuben!! Woo Hoo! But I don’t get there very often! I don’t usually make them, though. I’ll check out your recipe.

      Vipery is Tom’s term for it. She can really get her sharp little teeth going. Next time I am in Newport I will be finding that Reuben! Donna

    that reuben looks great. love pastrami. Ryeleigh is still cute as pie even when she’s an overtired grumpy baby 🙂 but puppy teeth are mighty sharp!

      Pastrami is great, but
      I was hoping for corned beef (and marbled rye). It is a little tricky trying to do certain types of cooking in a rural county. But as Tom pointed out, I can make it myself. Glad you think she is still cute as a viper. For us the cuteness is lessened with the pain. Steve does take some of the viper action too so we spread it around.
