Italian Pot Roast (Stracotto)


This was our dinner tonight thanks to the NYT Cooking.  The recipe is here.  I used our chuck roast, but the rest of the ingredients were sadly store bought at this time of year.  I also made it using our Instant Pot.  It was really good, although Tom would prefer separate vegetables and bread served with it.  I would recommend using a blender instead of a food processor as I made a big mess.

    Do you have a NYT cooking subscription? You seem to use a lot of their recipes. I do too, and I get the e-mail newsletter but there are always pop ups when I open the links? I was wondering if a subscription and using the recipe box option was worth it?

      I do have a subscription. I personally think it is totally worth it. Their recipes are great without exception so far. It helps me be more diverse with my cooking and use foods from our farm.
