Braised Elk with Tomatoes and Almonds

I found some freezer burnt elk meat on the bottom of our freezer. I wanted to braise it to help with the damage. So I used this NYT braised lamb recipe. It turned out really good. I would cut the meat into smaller chunks, and Tom would like less clove in it. Plus it was easy using my Instant Pot.

    We don’t eat elk, but I could probably do the recipe, except for the fact that I haven’t been able to use any of the NYT recipes, because of their requirements. Phoo!
    But I’m really glad to know that you have and use an Instant Pot, since I just bought one last week! Maybe you can tell me where to find better recipes than the ones in the book which came with the thing! I looked at a few online, but they all called for ingredients we’re not able to eat…soy sauce, balsamic vinegar are two which come to mind.

      Are you on pinterest? I have a recipe a site there under the name donnaschoon. I have all my recipes collected there. If you search instant pot you can find my three favorite.

      It is a subscription only site now. It did not used to be. My subscription is ending too.

        Found the recipe on your Pinterest board! Was not able to figure out how to search only your board for instant pot though.
